For over 20 years, I was in search of the ultimate wonton noodle soup — savory, warm, satisfying, the kind you find in the food stalls of Taipei for almost nothing, yet it feels like everything.
Nearly 15 years into a long tech career, I stumbled into a midstation lodge in Kagura, Japan. I took off my ski boots, sat in a tatami room, and was served a bowl of hot udon noodle soup and a cold Sapporo on draft. My inspiration was reignited.
