Midway through a powder day at Kagura, I ducked into Wadagoya -- a small lodge at the midstation. Boots off in a tatami room, a steaming bowl of udon noodle soup and a cold Sapporo. In that moment, everything made sense. The food wasn't just fuel. It was Recovery. Ritual. Reconnection.
That feeling stayed with me. Years later, when my appendix burst and I was rebuilding my gut from scratch, bone broth became the only thing that healed me. I started reading, studying, going deeper into the Traditional Chinese Medicine food traditions I'd grown up around. I realized that what I'd felt in that tatami room and what I'd experienced through recovery were the same thing: food as medicine, prepared with intention.
